British Sourdough Crumpets with Honeycomb Steam Holes
The fastest, most magical use for 1 cup of unfed sourdough starter: whisked directly with a pinch of sugar, salt, and baking soda, the fermented gluten batter foams in the bowl and cooks in greased rings on a cast-iron skillet, shooting vertical steam chimneys all the way through the top to trap pools of melted vegan butter.

Fermentation Science & Baker’s Notes
True British crumpets depend on a batter thick enough to hold open vertical tunnels as steam escapes, yet acidic enough to trigger instantaneous bicarbonate foaming. 100%-hydration sourdough discard has the exact viscosity and pH required with zero extra flour. For deeper fermentation diagnostics, Desired Dough Temperature math, and starter ratios, consult our The Zero-Waste Sourdough Discard Playbook and the master Vegan Sourdough & Wild Fermentation Pillar Hub.
Storage, Freezing & Refreshing
Store crusty artisan sourdough loaves cut-side down on a wooden board or inside a linen bread bag at room temperature for up to 3 days (avoid sealed plastic bags, which trap moisture and soften the blistered crust). For longer storage, slice the cooled loaf completely, place parchment squares between slices, and freeze in an airtight freezer bag for up to 3 months; toast straight from frozen or refresh whole loaves in a 375°F oven for 8 minutes.

Gather
Ingredients
- 240g (1 cup) room-temperature 100%-hydration sourdough discard or active starter (100% starter—no extra flour needed!)
- 1 tsp organic cane sugar or maple syrup
- 1/2 tsp fine sea salt
- 1/2 tsp baking soda (bicarbonate of soda)
- 1 to 2 tsp warm water (only if starter is very thick)
- Vegan butter or neutral oil, for greasing 3.5-inch metal crumpet/mason-jar rings
Make
Method
- 01Bring Starter to Room Temp: Measure 240g of unfed 100%-hydration sourdough discard into a medium bowl and let it come to room temperature for 20 minutes.
- 02Preheat Skillet & Rings: Heat a heavy cast-iron skillet over medium-low heat (315°F–325°F). Grease the inside of 3 or 4 metal 3.5-inch crumpet rings (or wide-mouth mason jar bands with the flat lids removed) generously with vegan butter and set them in the pan to preheat.
- 03Trigger the Acid-Bicarbonate Foam: Add the sugar, sea salt, and 1/2 teaspoon baking soda to the bowl of sourdough discard. Beat vigorously with a fork or whisk for 45 seconds—the lactic acid in the starter will react with the baking soda, causing the batter to puff into a stretchy, marshmallow-like foam.
- 04Griddle 8–9 Minutes on Bottom Side: Immediately spoon a generous 1/3 cup of foamy batter into each hot ring (filling halfway). Cook undisturbed over medium-low heat for 8 to 9 minutes as dozens of bubbles rise and pop into permanent vertical honeycomb holes and the top sets completely dry.
- 05Flip Brief 60 Seconds & Toast: Remove the rings with tongs, flip the crumpets top-side down for 60 seconds just to kiss the crown with golden color, then pop into a toaster until crisp outside and chewy inside. Slather hot with salted vegan butter and Marmite or jam.
