  • 2 cans small red beans
  • 1 onion, diced
  • 1 green bell pepper, diced
  • 2 celery stalks, diced
  • 3 garlic cloves
  • 1 tsp smoked paprika
  • 1 tsp thyme
  • ½ tsp cayenne
  • 1 bay leaf
  • 3 cups vegetable broth
  • Cooked white rice

Method

  1. 01Sauté onion, bell pepper, and celery (the holy trinity) in oil until soft.
  2. 02Stir in garlic, smoked paprika, thyme, cayenne, and bay leaf for 1 minute.
  3. 03Add red beans and broth; bring to a simmer.
  4. 04Mash half the beans against the side of the pot to create a creamy texture.
  5. 05Simmer 30 minutes until thick and serve over warm white rice.
