- 2 cans small red beans
- 1 onion, diced
- 1 green bell pepper, diced
- 2 celery stalks, diced
- 3 garlic cloves
- 1 tsp smoked paprika
- 1 tsp thyme
- ½ tsp cayenne
- 1 bay leaf
- 3 cups vegetable broth
- Cooked white rice

Method
- 01Sauté onion, bell pepper, and celery (the holy trinity) in oil until soft.
- 02Stir in garlic, smoked paprika, thyme, cayenne, and bay leaf for 1 minute.
- 03Add red beans and broth; bring to a simmer.
- 04Mash half the beans against the side of the pot to create a creamy texture.
