Fermentation Science & Baker’s Notes
When walnut skins come into contact with wet, fermenting sourdough, water-soluble polyphenols oxidize and tint the surrounding crumb a gorgeous lavender-violet hue—a hallmark of authentic French pain aux noix. Storage, Freezing & Refreshing
Store crusty artisan sourdough loaves cut-side down on a wooden board or inside a linen bread bag at room temperature for up to 3 days (avoid sealed plastic bags, which trap moisture and soften the blistered crust). For longer storage, slice the cooled loaf completely, place parchment squares between slices, and freeze in an airtight freezer bag for up to 3 months; toast straight from frozen or refresh whole loaves in a 375°F oven for 8 minutes.

- 100g (scant 1/2 cup) active peaked sourdough levain

Make
Method
- 01Soak & Prepare Inclusions: Plump the dried cranberries in warm water for 15 minutes, then drain and pat thoroughly dry so they do not steal moisture from the crumb during baking.
- 02Autolyse & Mix: Combine bread flour, whole wheat flour, dark rye flour, cinnamon, orange zest, and 360g water; rest 45 minutes. Add 100g levain, 10g salt, and 20g water; mix 4 minutes.
- 03Laminate Walnuts & Cranberries: After one set of stretch-and-folds at Minute 30, laminate the cooled toasted walnuts and plumped cranberries into the dough at Minute 60. Complete 2 gentle coil folds at 45-minute intervals.
- 04Bulk Ferment, Shape & Cold Retard: Ferment at 77°F to a 50% rise (about 4.5 hours). Shape into a boule, place in a rice-floured banneton, and cold-retard at 38°F for 12 to 16 hours.
- 05Bake: Score a symmetric cross or wheat-stalk pattern and bake in a preheated Dutch oven at 475°F covered for 20 minutes, then 440°F uncovered for 22 to 24 minutes (slightly lower uncovered heat prevents exposed cranberries from scorching).
