- 2 large yellow onions, finely pureed or minced
- 2 tablespoons oil
- 2 tablespoons berbere spice
- 3 garlic cloves, minced
- 1 tablespoon fresh ginger, minced
- 1 can tomato paste
- 3 cups water

Method
- 01Cook pureed onions in a dry pot over medium heat for 5 minutes to reduce moisture.
- 02Add oil, berbere spice, garlic, and ginger, cooking for 3 minutes until aromatic.
- 03Stir in tomato paste and cook for another 2 minutes.
- 04Add red lentils and water, bring to a boil, then reduce heat and simmer.
- 05Cook uncovered for 20-25 minutes until the lentils are completely tender and thick.
