The good part
Peruvian Culinary Heritage & Technique
The name Causa comes from the Quechua word Kausay ("sustenance" or "life") and became associated in 1820s Lima with "Por la Causa" (supporting Peruvian independence). Passing the potatoes through a ricer while still steaming hot prevents gummy starch and gives the terrine its signature velvety, sliceable crumb.
Make-Ahead & Storage
Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat warm dishes gently on the stovetop with a splash of vegetable broth, and add fresh lime juice, herbs, or sarsa criolla just before serving.
Nutrition & Substitutions
Naturally gluten-free and nut-free. Cooling cooked potatoes creates resistant starch, a prebiotic fiber that supports gut microbiome health and steadies post-meal blood glucose.
Gather
Ingredients
- 2 1/2 lbs Yukon Gold potatoes, peeled and quartered
- 3 tbsp Peruvian ají amarillo paste
- 3 tbsp extra virgin olive oil
- 3 tbsp freshly squeezed key lime juice
- 1 1/2 tsp sea salt, divided
- 1 can (15 oz) chickpeas, drained, rinsed, and coarsely mashed with a fork
- 1/3 cup vegan mayonnaise (aquafaba or soy-based)
- 1/4 cup finely diced red onion, rinsed in cold water and patted dry
- 1 celery stalk, finely minced
- 2 tbsp fresh cilantro or parsley, finely chopped
- 1 ripe Hass avocado, thinly sliced and tossed with 1 tsp lime juice
- Peruvian Botija black olives and microgreens, for garnish
Make
Method
- 01Simmer & rice the potatoes while hot: Place the peeled potatoes in salted cold water, bring to a boil, and simmer 15 to 18 minutes until fork-tender. Drain well and immediately pass the hot potatoes through a potato ricer or fine food mill into a wide bowl so no lumps remain. Let cool to room temperature.
- 02Knead the golden causa dough: Drizzle the olive oil, lime juice, ají amarillo paste, and 1 teaspoon sea salt over the cooled riced potatoes. Mix with a spatula and then knead gently by hand for 1 minute until smooth, pliable, and vibrant yellow.
- 03Prepare the chickpea salad filling: In a bowl, combine the coarsely mashed chickpeas, vegan mayonnaise, diced red onion, minced celery, chopped herbs, and 1/2 teaspoon salt.
- 04Layer the terrine: Lightly oil a 4-inch ring mold (or a parchment-lined 8x8-inch dish). Press half of the golden potato dough evenly into the bottom. Arrange a flat layer of sliced Hass avocado over the potato, then spread the creamy chickpea salad over the avocado.
- 05Top & unmold: Gently press the remaining half of the yellow potato dough on top, smoothing the surface with an offset spatula. Chill for 20 minutes, unmold onto chilled plates, and garnish with Botija olives and herbs.
