The good part

Sourdough Baker’s Brief: Crisp caramelized edges, chewy toffee centers, and zero cakey puff: simmering vegan block butter with 1 tablespoon of finely ground pecans or oat milk powder creates toasted brown-butter solids while evaporating excess water to balance 100 grams of tangy sourdough discard and pools of 70% dark chocolate.

Fermentation Science & Baker’s Notes

Because 100g of sourdough discard introduces 50g of water into cookie dough, boiling off the water content of the vegan butter while browning nutty solids keeps the total water ratio identical to a classic chewy cookie—yielding fudgy, rippled centers instead of cakey domes. For deeper fermentation diagnostics, Desired Dough Temperature math, and starter ratios, consult our Solving Hydration in Sourdough Discard Cookies and the master Vegan Sourdough & Wild Fermentation Pillar Hub.

Storage, Freezing & Refreshing

Store crusty artisan sourdough loaves cut-side down on a wooden board or inside a linen bread bag at room temperature for up to 3 days (avoid sealed plastic bags, which trap moisture and soften the blistered crust). For longer storage, slice the cooled loaf completely, place parchment squares between slices, and freeze in an airtight freezer bag for up to 3 months; toast straight from frozen or refresh whole loaves in a 375°F oven for 8 minutes.

Nutrition, Digestibility & Swaps

Dough balls can be frozen solid on a tray and baked straight from frozen at 350°F for 13 to 14 minutes whenever a warm cookie craving strikes. Want to adapt another family bakery recipe to 100% plant-based sourdough? Open our interactive Vegan Baking Converter.

Gather

Ingredients

  • 140g (10 tbsp) 80%-fat vegan block butter
  • 1 tbsp finely ground toasted pecans, almond flour, or oat milk powder (simmered in the vegan butter to create authentic toasted brown-butter Maillard solids)
  • 150g (3/4 cup packed) dark brown or muscovado sugar
  • 75g (1/3 cup + 1 tbsp) organic cane sugar
  • 100g (scant 1/2 cup) unfed 100%-hydration sourdough discard (1 to 5 days old for mild tang)
  • 2 tsp pure vanilla extract
  • 240g (2 cups) unbleached all-purpose flour
  • 3/4 tsp baking soda + 1/2 tsp fine sea salt
  • 200g (7 oz) 70% dark vegan chocolate bar, hand-chopped into shards and puddles
  • Flaky Maldon sea salt, for finishing

Make

Method

  1. 01Brown the Plant Butter & Evaporate Water: Place the 140g vegan block butter and 1 tablespoon finely ground toasted pecans/almond flour in a light-colored saucepan over medium heat. Simmer for 4 to 5 minutes, swirling often, until water boils off, foam subsides, and the nutty solids turn deep amber and smell like toasted hazelnut toffee. Pour into a mixing bowl and cool 15 minutes.
  2. 02Whisk Sugars & Sourdough Discard into Emulsion: Whisk the dark brown sugar and cane sugar into the warm browned butter for 60 seconds, then whisk in the 100g sourdough discard and vanilla extract vigorously for 90 seconds until thick, glossy, and pale caramel.
  3. 03Fold Flour & Hand-Chopped Chocolate: Add the flour, baking soda, and sea salt; fold with a spatula just until no dry streaks remain. Fold in 85% of the hand-chopped dark chocolate shards (reserving 15% to press on top).
  4. 04Chill 60 Minutes (or 24 Hours for Deep Toffee Flavor): Cover and chill the dough for at least 60 minutes (or up to 24 hours) so the flour hydrates the discard moisture and the butter re-solidifies.
  5. 05Scoop, Pan-Bang & Bake: Preheat oven to 350°F (175°C). Scoop 60g (3-tablespoon) balls spaced 3 inches apart on parchment-lined sheets and press reserved chocolate shards on top. Bake for 11 to 13 minutes until edges are golden-crisp and centers are still soft; tap the pan lightly on the rack at Minute 10 for crinkled bakery ripples and finish with flaky Maldon sea salt.
